"Hock" was an 18-century British designation for any Rhine wine sold in Britain or exported from Britain to its colonies, while "Negus" was the last name of the English courtier who invented this drink.
Ingredients
Steps
- Pour hot water of the other ingredients in a heat proof bowl. Stir to dissolve the sugar. Set aside to cool and steep for one to two hours. At serving time, strain out and discard lemon zest, then reheat the strained batch a bit so it's warmed but not too hot (20 seconds in a microwave does the trick). Pour into punch cups, topping each cup with more cinnamon and nutmeg. Serves four.
