Pan American Airways began its storied history by connecting Key West to Havana. The first flight, which carried air mail only, took place in October 1917. Three months later, in January 1928, seven passengers made the first commercial flight from Key West to Havana. Pan American soon became America's largest international airline, a distinction it held until 1991, but this cocktail celebrates its humble origins.

  of Cinnamon sugar syrup

  oz
  of Demerara / dark Muscovado sugar syrup (2 sugar to 1 water)

  of Tiki bitters
• 1

  of Absinthe (French/Swiss Style)

Steps

• Stir all ingredients over ice, and strain into a rocks glass with ice.
• Garnish with an apple slice.
