A good example of what plantocrats were drinking on Jamaica, Barbados and Antigua at the end of the 18th Century. This punch was published in an 1845 book.

  • Place sugar and guava in a small punch bowl. Brew 8 oz of green tea, then pour hot tea over sugar and juice. Whisk until both have liquefied. Add lime juice, cognac, Medeira, rum and water, let mixture cool. At serving time, add a block of ice and grate a little nutmeg on top. Serves six to eight.
