0.25ozof Dry Vermouth

Steps
- Place mint, sugar and lime juice in a Collins glass. Muddle. Fill with crushed ice, add rum and vermouth and stir to chill. Top with soda. Garnish with a bushy mint sprig and the spiral-cut peel of one whole lime placed in the glass, placed in glass "Horse's Neck" style (caballito is Spanish for "little horse").
